For two years now we’ve had the plan to build a 3.5m x 3.5m, double-walled, mudbrick coolstore.
Living in 28sqm doesn’t give a lot of room for storage and when it comes to hanging a deer or a sheep, storing bulk pumpkins, preserves and potatoes in a cool spot - we haven’t got many options.
Yes, we considered going below ground, but everywhere we dig, we find ground water so - above ground, in the forest, looks to be out best bet.
Lucky for us, we have a local legend in St Bathans called Keith Hinds who was a historic stonemasonry teacher at Otago Polytech. Although semi-retired, Dave has been working alongside him on some local restoration projects and is as excited as we are that there are people willing to learn and preserve the old ways of building.
